Sweet Red Pepper Mackerel Pâté


Ingredients (for one/two)

half a sweet red pepper mackerel fillet, skin removed (I bought these reduced from Waitrose)
1 tsp mayonnaise
1 tsp lemon juice
a few slices of chilli
a few coriander leaves, chopped

1. Roughly cut up the mackerel fillet and then mix in the other ingredients. If you are using plain mackerel instead, I would add a little grated ginger and 1/2 tsp mango chutney to the mix. 

Serve with toast, oatcakes, or eat on its own. A deliciously easy recipe.
