A Great Dinner Party Nibble - Swirly Pinwheels







Ingredients (makes roughly 28 pinwheels)

500g block puff pastry
pesto from a jar
half a block cheddar or any cheese, grated
vegetables like a carrot, pepper,
courgette and spinach leaves, finely chopped
10 olives, chopped (optional)
1 egg white for binding




1. Pre heat the oven to 180°C.

2. Cut the pastry in half and roll both out to form two sheets. Cover the pastry with pesto and then scatter the chopped vegetables evenly on top, followed by the grated cheese.

3. Tightly roll the pastry lengthways and bind the end of the roll with a little beaten egg white.

4. Cut the rolls into roughly 2cm pinwheels and place on a non stick baking tray (turned flat) for 10-15 minutes. Remove when they are golden and the pastry looks cooked.

Best served warm.
