Healthy Nutty Granola with Coconut, Rice Puffs and Goji Berries

This granola is perfection! The amount of syrup has been reduced to just the right quantity, making it nice and healthy, whilst retaining its deliciousness. The gluten free rice puffs are a must.

Ingredients (makes 15 servings)

to bake -

2 tbsp vegetable oil
2 tbsp maple syrup
2 tbsp sweet freedom syrup or agave nectar
1 tsp vanilla extract
300g oats
50g sunflower seeds
50g pumpkin seeds
4 tbsp sesame seeds
100g almonds, roughly chopped
1 tsp cinnamon

to add at the end -

2 handfuls of puffed rice
1 handful of brazil nuts
3 tbsp linseeds
2 tbsp goji berriess
6 tbsp desiccated coconut


1. Set the oven to 150°c. Line two baking trays with parchment or baking paper and set aside.

2. Pour all the wet ingredients into a large bowl and stir well. Add the rest of the baking ingredients to the bowl and mix until combined. (Leave the last 5 ingredients until the granola has cooked.)

3. Spread the mixture even between two baking trays in a thin layer and cook for 20 minutes.

4. After 20 minutes, remove the trays from the oven and move the granola about so that it does not burn. Place them back in the oven for a further 15 minutes until golden.

5. Allow the granola to cool for at least 10 minutes, and then combine the two trays together in a bowl.

6. Add the final ingredients, mix thoroughly, then pour into a suitable airtight container.

Eat this delicious granola for breakfast, with yoghurt or milk, or simply sprinkle on salads and other food to add a sweet crunch.

Super Fruity Strawberry, Pineapple and Tangerine Juice topped with Goji Berry Flaxseed




I don't often post smoothies and juices, because they're incredibly easy to make. All fruit tastes great when it's pulverised. However, this one was extra fruity, delicious and the easiest of easy.

Ingredients (serves 1)

- 30 small British strawberries
- 8 pineapple pieces
- 1 tangerine or orange, peeled

- goji berry, pumpkin seed and sunflower seed flax (find the recipe further down)

1. Simple blend the fruit together in a tall mixer, pour into a large glass and sprinkle with the flaxseed topping.

Apple and Cinnamon Overnight Oats with Vanilla Yoghurt, Goji Berries and Apricots

Ingredients (breakfast for one - fills a medium jam jar)

- 1/3 plain porridge oats
- 1 large tbsp flaxseed (find my recipe a few posts down)
- 2 tbsp vanilla yoghurt 
- 2 apricots, chopped
- 1 very small apple (or half a medium apple), grated
- 1 tsp flaked almonds
- 1 tsp sunflower seeds
- 1 tsp pumpkin seeds
- 1 tbsp goji berries
- 1 tsp raisins or sultanas
- 1 tsp linseeds
water (about 1-2 tbsp)
- 1 1/2 tsp cinnamon
- 1-2 tsp golden syrup or jam

Overnight oats is so simple and delicious, I'd eat it every morning if I could. I have continued to experimented with this apple version, and I think I've hit the jackpot! All the seeds and currents add extra flavour and texture, the goji berries are also a great addition as they absorb the water, soften and become super juicy.

1. Place everything apart from the water into a suitable jam jar, and stir the mixture with a spoon. Depending on the size of the jar, you may have to reduce the quantities of seeds or berries.

2. Once the mixture gets too thick, gradually add some water, a little at a time until it resembles rice pudding.

3. Place the jar in the fridge overnight or for a couple of hours before eating, drizzle with extra golden syrup to make it sweeter.

Strawberry Overnight Oats with Homemade Goji Berry Flaxseed


Ingredients (for one)

- 1/3 porridge oats, roughly 30g
- 1 tbsp homemade goji berry flaxseed (see post below for recipe)
- 2 tsp flaked almonds
- 1 tbsp plain (with 1 tsp honey or golden syrup) or fruit yoghurt, I used Cranberry Activia
- 5 strawberries, chopped
- milk

1. Add all the ingredients apart from the milk to a suitable jar or glass.


2. Pour in 2 tbsp milk and stir everything thoroughly. The consistency should resemble risotto.


3. Place the glass in the fridge covered with cling film and leave overnight or for a couple of hours.


3. Eat in the morning straight from the glass!


Homemade Flaxseed Recipes - Vegan and Dairy Free


I have previously bought my flaxseed from Holland and Barratt, but it seems to be quite expensive when you can make it easily yourself. Flaxseed can be added to almost anything and is packed with omega 3 and nutrition. I like to add it to overnight oats and smoothies.

Plain Flaxseed

Ingredients

- 50g linseeds (golden or brown)

1. Blend the linseeds in a tall food processor or blender until they resemble ground almonds.







Goji Berry, Sunflower and Pumpkin Seed Flax


Ingredients

- 50g linseeds (golden or brown)
- 25g goji berries
- 25g sunflower seeds
- 25g pumpkin seeds

 1. Blend all the ingredients in a tall food processor or blender until they resemble ground almonds.
