Pesto is the bomb! Whether smothered on salmon, dolloped on pasta, or spread on toast, pesto is so versatile.
Ingredients (fills one ramekin dish)
31g bag of basil, leaves removed
1 small handful of coriander, stalks and all
18g almonds, ground
30g cheddar, grated
1 cloves of garlic
a few slices of ginger (optional)
2 tsp lemon juice
1 1/2 - 2 tbsp olive oil
salt and pepper
1. Start by grinding the almonds in a mixer or with a hand blender.
2. Mix in the coriander, basil, lemon juice, garlic, ginger and olive oil and blend well.
3. Once mixed thoroughly, add the cheddar cheese and seasoning. You may need to add some more oil if it looks too dry, but it should be fine.

Pesto Smothered Salmon with Celeriac, Chilli and Ginger Stir-fry
Ingredients (serves one)
1/4 red onion, sliced
1 clove of garlic, crushed or grated
10cm piece ginger, grated
half a chilli (or more), sliced
half a celeriac bulb, roughly sliced
2 celery sticks, chopped
2 tsp lemon juice
one big handful of spinach
1. Firstly heat the oven to 200°C and place the salmon in kitchen foil. Cover the salmon with a good quantity of the prepared pesto (or any pesto) and wrap the extra foil around the fish to form a little parcel. Then put the salmon in the oven for 15-20 minutes depending on it's size.
2. Prepare all the vegetables for the stir-fry and after the salmon has been in the oven for 10 minutes, you can start cooking them. Put a little vegetable oil in a large frying pan and fry off the onions for a minute. Then add the rest of the ingredients apart from the spinach.
3. Cook and continually stir the vegetables for 5 minutes until they start to soften and then add the spinach. The fish should be fully cooked by the time you finish the stir fry.

3 handfuls gluten free pasta
1 tbsp homemade pesto
a few slices of smoked salmon, cut into shreds
salt and pepper
1. Once the pasta is cooked and drained, return it to the pan and add the pesto and smoked salmon. Keep the pan on the turned off hot hob and continuously stir until the pesto coats the pasta.
